by William Proulx

Carrot sticks cut 1 1/2 inch by 1/4 inch square. Doesn’t have to be perfect just try to make them as even as possible so they cook equally

1 tbsp butter

2 tbsp Chef Bill Lemon Whiskey Sour

Salt and pepper to taste

choose a sauce pot and lid and place in medium heat, melt butter add carrots and shallots. Cover pot and sweat carrots.
stir mixture every couple of minutes to move carrots and shallots to prevent burning.

cook for another 5 minutes and reduce jam to make a glaze that sticks to the carrots.
